Since the weather was cooperating today I took advantage and did some walking around town. I’m currently in a stepbet challenge where I have to get a certain number of steps in each day for a total of 6 weeks. My daily average is about 30,000 steps if you can believe that! I beat my all time record today with 45,000 steps! I decided to make something quick yet very tasty so this veggie bowl was perfect. This Quinoa Veggie Salad Bowl with Spicy Peanut Sauce can be made with a variety of vegetables, basically anything you have lying around the kitchen lol.
Vegan Quinoa Veggie Salad Bowl with Spicy Peanut Sauce

Ingredients
- Spicy peanut sauce
- 4 tbsp all natural peanut butter
- 4 tbsp hot water
- 2 tbsp fresh squeezed lemon juice
- 2 tbsp vegan soy sauce
- 2 tsp Thai red curry paste (I use Thai kitchen they don’t use fish)
- 3 tsp Sriracha chili sauce
- Veggie bowl
- ½ cup cooked quinoa (cook to package directions)
- ½ cup broccoli coleslaw
- 1 green spring onion sliced
- 1 carrot shaved into ribbons with peeler
- 5 snow peas
- 5 broccoli florets chopped
- 1 tbsp sesame seeds
Instructions
- To make the spicy peanut sauce
- Whisk all the sauce ingredients by hand in a small bowl.
- Preparing the veggie bowl salad
- Place the quinoa in the bottom of bowl.
- Arrange the assorted veggies on top of the quinoa, sprinkle sesame seeds on top.
- Drizzle on peanut sauce.
