Vegan Jicama Salad

Sorry for the lack of a post yesterday but we were very busy. Packing and preparing food just for a weekend is time consuming. I made this delicious jicama salad, sweet potato patties and of course you can’t go camping without beans so I made a crock-pot of homemade beans. The beans and patties will be on the blog over the weekend.

We also had to make sure the kids had everything they needed. Ethan doesn’t know how to cook unless it’s pasta so it will be pasta and ordered pizza for them. They also have enough junk food such as chips crackers and pop for the weekend. Some off you may think there not the best choices for the boys but all teenagers like junk and once in awhile I think they’ll survive Lol.

We also had to watch our Survivor finale last night, Philips been a fan and watching since episode 1 season 1 and not missed a show! Ethan has been watching since he can remember. We know it’s edited and stuff but he loves the character building and that they are “normal” people living together in a hostile environment.

Ingredients
  • 3 cups of diced jicama
  • 1 red bell pepper diced
  • 1 pink lady Apple diced
  • ¼ cup cilantro chopped.
  • 6 radish diced
  • 2 stalks celery diced
  • ¼ cup raisins
  • 2 ears corn
  • Dressing
  • 3 tablespoon olive oil
  • ¼ cup lime juice freshly squeezed
  • 2 tablespoon horseradish
  • Pepper to taste
Instructions
  1. This recipe calls for raw corn. Remove corn husks and clean corn. Taking a knife cut nibblets off the corn ears into a bowl.
  2. Mix rest of salad ingredients together in salad bowl.
  3. Whisk the dressing ingredients together. Pour over salad. Let sit for 10-15 minutes for flavours to mingle.
