Monday Mondays, everybody hates them. Beginning of the week is always very hectic for everyone. This weekend saw the arrival of spring but the weather doesn’t seem to understand that. Even though the weather was -16C at 6am I still rode my bike to work, yikes! It was cold let me tell you, oh and I got a flat tire if the -16C wasn’t bad enough.
I ended up having to walk most of the way with my bike by my side which made me arrive 30 minutes late. Like I said everybody hates Mondays. After having a hectic morning I decided that I wanted a quick lazy dinner My Sweet Potato and Lentil Stew is just that. Everything simply gets thrown in the crockpot and slow cooked for around 4 hours on high. It could be cooked on low for 7 hours if you have the time.
I love sweet potato more than anything, so this recipe was right up my alley. And of course it goes so well with my next best ingredient lentils. Both of these grocery items are so cheap and can be found at any local grocery store.
- 2 large sweet potatoes peeled and chopped.
- 2 cups carrots chopped
- 2 cups celery chopped
- 1 onion chopped
- 1½ cup red lentils
- 4 cups vegetable broth
- 1 cup water
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 2 cloves garlic minced
- 2 cups kale
- Throw everything in crockpot or slow cooker except the kale. Cook on high for 4 hours or slow for 6-7 hours. Then add kale and leave to wilt.
- Enjoy your thick hearty stew. Pretty easy!
