Strawberry and Kiwi Salsa

Well, it’s Monday and we are already looking forward to this weekends camping trip! Yes we’re off again up North regardless of the weather. This time we are venturing to an Ontario Provincial Park. Located in between the town of Thornbury and Collingwood. It’s called Craigleigh and it’s located right on the shore of Georgian bay. It’s got a great bike trial that’s been converted from an old train rail road. We don’t usually go to provincial parks since they have stricter rules and we go camping to relax!

Also we do like to stay up late sitting by the camp fire and chatting while quiet music is playing, so nice and relaxing! Back to today, Mondays are always Game of Throne nights at this point in the season, we all love it so much and cannot wait to sit down and enjoy it. So I decided to make a healthy snack for the show. Strawberry and Kiwi Salsa! It’s a great healthy change to your normal store bought salsa. We also use great organic corn chips which are unsalted, a great snack while enjoying your favorite show.

Strawberry and Kiwi Salsa
I made this salsa with strawberries, kiwi, jalapenos, limes, cilantro, red onions and cucumber. Healthy and delicious! It’s got a nice refreshing flavor and taste.

Strawberry and Kiwi Salsa
This is a large amount of salsa great for a large BBQ or picnic. You can half the amounts of the ingredients to make half the recipe. I like to eat this just as a salad all on its own or with a bed of greens.

Ingredients
  • 454 grams Strawberries diced
  • 2 kiwi peeled and diced
  • ½ small red onion diced
  • ½ yellow bell pepper diced
  • ½ English cucumber diced
  • 1cup cilantro chopped
  • 1 green jalapeño diced tiny
  • Juice from 1 lime
Instructions
  1. Place all chopped ingredients in a bowl. Toss together in lime juice.
  2. Serve with organic corn chips or pitas.
