Raw Vegan Date and Apricot Energy Balls

I have got back into my schedule of going to the gym daily, it’s funny how I let it slide sometimes. Any how, since I made those delicious energy balls yesterday it made perfect sense to have some after today’s workout. They are very addictive, but in a good way. These easy no bake Raw Vegan Date and Apricot Energy Balls can be whipped up in only a couple minutes, so no excuses not to make them!

This recipe can be easily modified to include just about any dried fruit like: cranberries, mango’s and pineapples. The choice is up to you and your imagination.

Ingredients
  • 1 cup medjool dates about 10
  • ½ cup raw cashews
  • ½ cup raw pumpkin seeds
  • ⅔ cup dried apricots
  • ½ tsp vanilla
  • Coconut
Instructions
  1. Place all ingredients in food processor. Pulse until it forms a sticky dough.
  2. Form into small balls and roll in the coconut.
  3. Store in air tight container in the fridge.
