Busy Tuesday, even though Philip had to work overnight to resolve a security issue he was still up this morning working on the network. This is why we love our weekends so much, sun, camping, traveling and NOT working! Tuesdays are also the night I work late with my job. We planned ahead and made a great raspberry and pistachio salad for lunch.
It’s another very simple, nutritious and healthy lunch. Great ingredients such as fresh raspberries, cucumber, onions, avocado and of course pistachios!
it really is as simple as placing all the ingredients; raspberries, chopped onion, avocado, cucumber and pistachios into a salad bowl and tossing together.
I just love avocados, filled with their heart healthy monounsaturated fatty acids. I just love the taste!
And what about those pistachios, another nut that I cannot live without lol. These pistachios give this salad a great crunch!
- Salad
- 1 pint raspberries
- 1 English cucumber diced
- ½ red onion diced
- 1 avocado diced
- ½ cup pistachios
- Bed of greens (optional)
- Raspberry dressing
- ⅓ cup raspberries
- 1 tablespoons freshly squeezed lemon juice
- 1 tablespoons white wine vinegar
- ½ teaspoon agave
- 3 tablespoons olive oil
- freshly ground black pepper to taste
- Salad
- Place chopped onion, avocado, cucumber and pistachios in salad bowl. Toss together.
- Gently add the raspberries toss gently so raspberries don't get squished into flatten raspberries or mush.
- Enjoy salad as is with dressing or serve on a bed of greens. My favourite with the sweetness of the raspberries is arugula.
- Salad dressing
- Blend all ingredients together in small blender. It as easy as that. This is a thicker dressing and you don't need to use lots.
