It’s almost the weekend so I decided to make a very quick but delicious and healthy Vegan Beet and Carrot Salad. Sometimes the simple things in life are the best. This salad is so easy to throw together and the dressing is so tasty with 3 ingredients.
I had this awesome salad for my dinner so I wouldn’t be tempted to go out with being the weekend.
Quick Vegan Beet and Carrot Salad
Recipe type: Salad
- 1 large beet peeled
- 1 fat carrot
- ½ English cucumber
- 2 tbsp raw pumpkin seeds
- ¼ cup Tuscan herb olive oil
- ⅛ cup Fig balsamic vinegar
- a dash of Dijon mustard
- Simply spiralize all the vegetables into a bowl. Toss together in bowl.
- Place all dressing ingredients in a small jar and shake to emulsify. You can also whisk all ingredients together. Drizzle dressing over salad and toss together. Sprinkle pumpkin seeds over salad. Enjoy.
