What a beautiful weekend it’s been! We came back from our camping trip a little sun burnt but no complaints from us two! The weather was absolutely gorgeous, sunny, hot and not a cloud in the sky! How sad we are that we had to leave the camp site and unpack, Philip has work all next week and then were off again the following week for a 5 day camping trip to Gananoque Ontario. It’s somewhere we haven’t been before, camping at least. We may have driven through a couple times on the way to Montreal or Quebec city.
I was feeling a little dehydrated from all the sun this weekend so I needed to replenish my loss of liquids. I decided to make myself a pineapple and coconut smoothie using coconut water.
When making a smoothie it’s always best to use fresh fruit, but on this occasion I didn’t have any fresh Thai young coconuts. I used this organic coconut meat that you can buy frozen at your local health food store, don’t let the word meat scare you it’s 100% coconut and it’s raw!
You could use a frozen banana to make the smoothie cooler if you like but I didn’t have any so used a fresh banana.
- 1 cup coconut water
- ½ coconut meat
- 1 banana
- 1 cup pineapple (extra for topping)
- place ingredients in Vitamix in order listed and blend until smooth and creamy.
- Pour in jar and top with extra pineapple.
