The weekend was busy as usual, Sunday we did a good 24 km walk/jog first thing in the morning. I wanted to try something a bit different today but wanted a nice fresh salad.
I love this breakfast. I make the chia pudding without any added sweetener because the pineapple and mangoes flavors add the sweetness to this breakfast. You can add 1 tbsp of maple syrup or agave if you have a very sweet tooth to the chia pudding mix.
It’s almost the weekend so I decided to make a very quick but delicious and healthy Vegan Beet and Carrot Salad. Sometimes the simple things in life are the best. This salad is so easy to throw together and the dressing is so tasty with 3 ingredients.
This parfait is so simple and easy to make. I tried to make coconut whipped cream from canned coconut cream without any success. I’ve tried various companies and it never comes out right. I tried other recipes from various blogs and still haven’t had success.
Unfortunately the Easter weekend is coming to an end, I hope everyone had a good holiday. We spent the weekend away at Craigleith Provincial Park in our travel trailer. It was a very rainy and windy weekend, but we still had fun. It was great just to get away from it all. Our boys didn’t come with us yet again which is becoming the norm.
Hi guys, rather quick post since it’s been a wonderful long weekend here in Southern Ontario. The weather has been glorious and we’ve been busy outside in the garden. Who wants to be inside when the weather is great outdoors! We’ve setup our gazebo, went for a bike ride and just relaxed in the sun.

This creamy chickpea salad has the same texture as an egg salad. It can be used to create a very nutritious sandwich or eaten as a side salad. I like to eat in lettuce boats. I garnished the salad with hemp heart toppers, it’s a hemp seed mix.
