On a cold frosty morning (which we get here in Ontario) there’s nothing more like a delicious warm bowl of Oatmeal to start your day.
This creamy chickpea salad has the same texture as an egg salad. It can be used to create a very nutritious sandwich or eaten as a side salad. I like to eat in lettuce boats. I garnished the salad with hemp heart toppers, it’s a hemp seed mix.
I love Chia pudding for breakfast, but it makes a great dessert. There are lots of recipes out there that add sweetener to the pudding but I feel that the pineapple and coconut adds just the right amount of sweetness in this recipe, but feel free to add your favorite sweetener to the Chia pudding mixture.
What a nice day here in Burlington for the start of April. I started the day off with a 6 km jog and a 6 km walk along our beautiful lake front in Burlington Onatrio. Lots of people were walking their dogs and at the park with children, the hustle and bustle of a spring day.
Since the weather was cooperating today I took advantage and did some walking around town. I’m currently in a stepbet challenge where I have to get a certain number of steps in each day for a total of 6 weeks. My daily average is about 30,000 steps if you can believe that! After a busy weekend celebrating our older sons 21st birthday in Toronto I decided to make a quick White Bean Hummus with Spicy Crushed Paprika Dip. I simply love hummus with vegetables so for a change thought I would try making this kidney bean hummus, it makes a tasty change to chickpeas.
