Today was our end of the school year luncheon for the YMCA staff. We went to the Manderin Chinese buffet restaurant. There wasn’t a lot of entrees that were vegan but they did have lots of vegetables and fruits. I ended up loading up my plate with lots of greens, mushrooms, carrots and various other veggies. And of course plenty of fruits, cantaloupe, pineapple, watermelon, grapes and mangoes. I left the chicken balls and fried rice for everyone else!
Today at work was a great day, I took my Vitamix blender into work and made smoothies for all the kids. Some were brave enough to try the spinach smoothie and actually liked it! After having such a big lunch I decided that a smoothie was in order for tonight’s meal. So of course another great green smoothie for me.
Loaded with bananas, oranges, spinach and mango. I love simple smoothies with no added sugars, syrup or agave. I like fruit based smoothies rather than almond milk and yoghurt smoothies.
If you like your smoothies ice cold cut back on the orange juice and add some ice. If you don’t have a frozen banana a regular one will just as easily work.
- 2 oranges
- 2 cups spinach
- 1 mango
- 1 banana frozen.
- Extra fruit to top smoothie
- Juice the 2 oranges with citrus juicer. Pour juice in to blender. Add spinach. Remove skin and pit from mango add to blender. Add banana and blend till smooth.
- Top with extra fruit.
