Vegan Creamy Cauliflower and Broccoli Soup

  • 2 heads broccoli florets
  • 1 head cauliflower florets
  • 2 tbsp virgin olive oil
  • 2 cloves garlic, chopped
  • 1 medium onion, diced
  • 1 tsp curry powder
  • 1 tsp salt
  • 1 tsp pepper
  • 4 cups vegetable broth
  • 1 can cold coconut milk separated (use cream part only)
  1. Pre heat oven to 400F
  2. Place cauliflower, broccoli, onion and garlic in a large bowl. Toss with olive oil salt and pepper.
  3. Line a baking tray with parchment paper and spread cauliflower, broccoli, onion and garlic on tray.
  4. Roast for 15 minutes. Remove from oven to a large pot.
  5. Add 4 cups of vegetable broth, with curry powder.
  6. Bring to a boil until cauliflower is soft about 5-10 minutes.
  7. Carefully blend the soup mixture in blender in batches. Return to the pan or use an immersion blender.
  8. Add 3 tablespoons of the cream only from the can of coconut milk. Stir through soup.
  9. Serve and enjoy!
