Vegan Black Bean Salad Wraps

Ingredients
  • 2 ripe tomatoes diced
  • 1 cup black beans
  • ¾ cup corn
  • ¾ cup cucumber diced
  • ⅓ small red onion diced
  • 2 tsp extra-virgin olive oil
  • 1 tsp balsamic vinegar
  • 1 avocado diced
  • a pinch chili pepper
  • 6 tbsp salsa
  • 6 tbsp vegan sour cream
  • handful spinach
  • 6 tortillas wrap
Instructions
  1. Place first 5 ingredients into a bowl.
  2. In a small measuring cup mix the oil, vinegar and chili pepper, drizzle in salad and mix.
  3. Arrange wrap, row of spinach, row of black bean salad, row of sour cream top with salsa.
  4. Then top with avocado.
  5. Roll and enjoy. Delicious!
