Raspberry and Pistachio Salad

  • Salad
  • 1 pint raspberries
  • 1 English cucumber diced
  • ½ red onion diced
  • 1 avocado diced
  • ½ cup pistachios
  • Bed of greens (optional)
  • Raspberry dressing
  • ⅓ cup raspberries
  • 1 tablespoons freshly squeezed lemon juice
  • 1 tablespoons white wine vinegar
  • ½ teaspoon agave
  • 3 tablespoons olive oil
  • freshly ground black pepper to taste
  1. Salad
  2. Place chopped onion, avocado, cucumber and pistachios in salad bowl. Toss together.
  3. Gently add the raspberries toss gently so raspberries don't get squished into flatten raspberries or mush.
  4. Enjoy salad as is with dressing or serve on a bed of greens. My favourite with the sweetness of the raspberries is arugula.
  5. Salad dressing
  6. Blend all ingredients together in small blender. It as easy as that. This is a thicker dressing and you don't need to use lots.
