Well, after freezing our butts of last night we’ve had an excellent day! The weather up here at Georgian bay has been wonderful. We got up and brewed a nice decaf coffee and had some whole wheat toast for breakfast with peanut butter. We decided to take a drive into Philip’s childhood beach vacation spot Sauble Beach and have a coffee at one of our favorite coffee bars up here Two Chicks Cafe. They serve nice healthy snacks and have the best coffee around. It’s not a vegan cafe but it does certainly offer vegetarian choices.
This small cafe does get very busy in the summer months and offers live local music and has good wifi (who doesn’t like wifi) Enjoying our coffee we walked down the beach strip to enjoy some sun rays, although the wind was sharp and cold.
After our stroll we took a drive into the closest town which is Wiarton. It’s famous around here for Wiarton Willy, the ground hog who lets us know if spring is going to be early. We browsed some local shops and picked up some food supplies at the grocery store. We then came back to relax at our camp site for the rest of the afternoon.
We have our favorite spot at Hope Bay Campground #308 which is tucked away and nice and quiet. The mosquitos have not been around which is always glorious! The owner is really nice and friendly, and we are now considered regulars since we’ve been coming up here for 10 plus years. They have a really nice store that serves great fresh brewed coffee and ice cream (not vegan) We like to sit and enjoy the sun in one of there adirondack chairs.
Every time we go camping one of our dinners HAS to be beans, it’s something about late night campfire beans that signifies camping. I decided instead of buying tinned vegan beans I would make my own version. I did prepare these beans at home since they do take a good 8 hours to cook in the crockpot! You could do it in your trailer if need be. I add sauteed onions, bell peppers and tomatoes to the basic bean recipe. We have them with BBQ’d potatoes in olive oil.

- 3 cups of dried white beans
- 1 red onion diced
- 1 680ml hunts spicy red pepper and chilli sauce
- 1 cup vegetable broth
- 3 tablespoon molasses
- 2 teaspoon dry mustard
- 2 teaspoons vegan Worcestershire sauce
- Soak the beans overnight.
- In the morning, add all the ingredients to the crock pot.
- Cook on high for the first hour and turn down to low for an additional 7-8 hours.
