Welcome home honey! Philip is back from his longish road trip to Ottawa for work. He tells me it was all work and no play. He didn’t really have time for much else, even his beloved photography. After being away from my vegan home cooking and eating in not so healthy pubs and restaurants he was glad to have a nice fresh vegan Apple and Date Salad with Maple Dijon Dressing.
I decided to try an apple and date salad because of my fondness for dates. Dates are delicious fruits from tropical places, loaded with much-needed minerals and energy. They are sweet, sticky, chewy and sugary fruits that reminds me of caramel. This salad is loaded with nuts and seeds which offer some nice crunch to compliment the soft dates. The apples offer extra sweetness for a full delicious meal.
Top this salad with sprouted mixed beans and nuts
Topped with a fresh home made Maple Dijon Dressing
- Apple and Date Salad
- Ingredients:
- 5oz organic field greens
- ½ cup of pitted medjool dates
- 2 apples sliced
- ½ cup red onions
- ½ cup of mixed nuts and seeds
- ½ cup of mixed sprouted seeds
- Maple Dijon Dressing
- Ingredients:
- ⅓ cup of balsamic vinegar
- ½ cup olive oil
- 2 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- Salt & pepper to taste
- Method for Salad
- Combine all ingredients in a large salad bowl. Dress with Maple Dijon dressing.
- Method for Dressing
- Blend all ingredients together makes 1 cup.
