We woke up Sunday morning and knew we had a busy day ahead of us, but first I wanted to take my mumsey out for breakfast at her local British pub. She likes pubs because it reminds her of her British heritage. It was made into a family affair when Paul and Kim joined us. I enjoyed my western omelet with home fries and whole wheat toast while Tricia enjoyed the Vegan roasted vegetable salad. It was a -30° day here in Burlington Ontario so it was nice to have breakfast in a cozy British pub.
We are currently renovating our bedroom which is located in our basement. You may ask why our bedroom is in the basement? We had to give up our main floor bedroom for a Lego room, we are suckers for that kind of thing. We are at a point in our renovation where we have to paint the bedroom walls. A quick visit to our local Home Depot to select our paint color was in need.
While painting the room we were listening to some DJ Boiler Room sets on YouTube specifically Nightmares On Wax which makes time fly by. After some tiring hours of painting we decided to quit for the day and enjoy some home made Mojitos and snacks.
We enjoyed Baguette and homemade Bruschetta with Red Devil cheese. This little Welsh wonder is an artisan Red Leicester cheese laced with chilli and crushed pepper and sealed in red wax. It’s a wonderful mouthful of moist tangy cheesiness with a bite of heat; but the chilli doesn’t overwhelm the cheese or outstay its welcome. I enjoyed slice after slice! My wife doesn’t know what shes missing by not eating cheese!
To compliment these tasty snacks we decided to give some homemade grapefruit Mojitos a try. Traditionally, a Mojito is a cocktail that consists of five ingredients: white rum, sugar (traditionally sugar cane juice), lime juice, sparkling water, and mint. The original Cuban recipe uses spearmint or yerba buena, a mint variety very popular on the island. Its combination of sweetness, refreshing citrus, and mint flavors is intended to complement the potent kick of the rum, and has made this clear highball a popular summer drink. We changed our up a little by using freshly squeezed grapefruits.
We used a fine mesh sieve to strain the extra pulp and seeds that the juicer missed.
Be sure to rinse the mint leaves under cold tap water.
After all that hard work (well actually it wasn’t that hard) you should be presented with a beautiful looking and rather refreshing Mojito.
