Vegan Jackfruit and Potato Curry

This is my very first attempt at using Jackfruit. I bought a can of young green Jackfruit in brine for this curry. Jackfruit is a meaty alternative when cooked and takes on flavors incredibly well which makes it perfect for substitute for pulled meats like beef and pork. A local Indian restaurant serves a Jackfruit curry and my husband really enjoyed it so here’s me giving it a try. It turned out delicious full of flavor, we both enjoyed it.

I love Sautéed mushrooms and onions. I often pull out a skillet, toss in sliced onions and mushrooms, a little bit of olive oil, salt and pepper, you can add them as a side to many dishes. Sautéed mushrooms are one of the best and quick ways to cook mushrooms. Sautéed with onion they get a wonderful flavor.

Another soup, I can eat soup anytime, even though it was 26F outside hopefully summer is on its way. I use lentils a lot in my cooking whether it’s soup, curries or even shepherds pie. Lentil soup is simple, and easy to throw together. It’s my go-to meal when I want something hearty but healthy. . One cup of cooked lentils only contains about 230 calories, but still leaves you feeling full and satisfied. Red lentils are perfect for when you’re in a hurry because they cook quicker than other legumes.

Camping Vegan Arrabbiata Penne Pasta dinner review

We went on our very first trailer camping weekend of the season this May 1st. We decided to go to one of our favourite sites near Collingwood which is Craigleith Provincial Park just outside of Thornbury on the coast of Georgian Bay. Even though its already May the weather wasn’t cooperating. It was hovering around the 0 degrees Celcius temperature (in other words freezing!) Luckily our trailer has a nice gas furnace to keep us toasty and warm. Not being the best planners in the world, We did however run out of gas and had to fill up the tanks.
